Ninfa's Coming To Baylor, Beginning Monday

Baylor Dining Services will welcome a new partner to the dining options available on the Baylor University campus when Ninfa's, the popular Mexican restaurant, opens Monday, Aug. 23, in the SUB in the Bill Daniel Student Center.
Ninfa's will fill the space previously occupied by HomeZone. The restaurant will serve breakfast and lunch and will be open Monday thru Friday from 7 a.m. to 3 p.m.
Baylor students took part in two surveys during the 2004 spring semester - one on dining styles and the other on the Baylor Student Union. Results showed that students wanted a strong addition to the offerings in the SUB.
"Students told us that they wanted a Tex-Mex option on campus," said Brett Perlowski, director of Baylor Dining Services.
The Baylor Ninfa's will serve a selection of taquitos for breakfast. Lunch offerings will include crispy and soft tacos, tacos al carbon, burritos, quesadillas, chips, salsa and queso.
"We are privileged to have the opportunity to be on the Baylor campus," said Gabriel Rodriguez, owner of Ninfa's in Waco.
"The addition of Ninfa's at Baylor is in keeping with our desire to continuously listen to our students and to strive to raise the bar in terms of excellence," said Rick L. Creel, associate vice president for operations and facilities at Baylor.
