Mexican restaurant joins SUB foot court

Ninfa's Mexican Restaurant will begin serving up its traditional Tex-Mex food today in the food court inside the Bill Daniel Student Center. Ninfa's will replace HomeZone next to Chick-fil-A.

The kitchen will be open Monday through Friday from 7 a.m. to 3 p.m. The SUB will now be home to a selection of Tex-Mex food, sub sandwiches and chicken selections along with snacks and drinks.

Baylor Dining Services made the changes after Baylor students took surveys that indicated they wanted a better food variety in the SUB.

"They [the selections] were OK," Lanie Millar, a Spanish lecturer, said. "I ate there occasionally -- not all the time -- because I tended to eat the same things over and over again."

Millar heard the news of the franchise's Baylor location and liked the idea.

"I like the restaurant and I think that that's a really good addition to the eating places in the SUB," Millar said.

Ninfa's will serve a variety of taquitos for breakfast. Crispy and soft tacos, tacos al carbon, burritos, quesadillas, chips, salsa and queso will be among the different lunch items served.

"I just love Mexican food period. Their fajitas are really good and, of course, the chips and queso," Lavonia Tryon, a Houston senior, said.
